What happens when I uninstall an extension from google chrome?

I want to try out a few extensions for google chrome but many of them say they will have access to my information i.e. private information, website history and data. Why do they need this? What will they use it for? Any other information would be helpful. And after I uninstall the extension do they still have access to my information?|||no worry, it is anonymous
